Open up the portal and let out the presents: it’s time to ring in the season with a massive battle between Kaiju and Jaegers! This fight is tasty, too. Monster versus machine will take over your Christmas tree as fragrant Pacific Rim gingerbread ornaments.

Pacific Rim Gingerbread Cookies
– Kaiju and Jaeger Pacific Rim cookie cutters
– 3 cups all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon ground ginger
– 1/2 teaspoon cinnamon
– 1/2 teaspoon nutmeg
– pinch of salt
– 1 cup (2 sticks) unsalted butter, softened
– 1 cup brown sugar
– 1 egg
– 3 Tablespoons molasses
– 1-1/2 teaspoons vanilla
In a medium bowl whisk together the flour, baking soda, ginger, cinnamon, nutmeg and salt. Set aside.
In the bowl of an electric mixer cream the butter and brown sugar until combined.
Add the egg, molasses and vanilla, then slowly add in the dry ingredients just until the dough comes together.
Split the dough into two and wrap in plastic wrap. Chill until you are ready to use.
Preheat the oven to 350 degrees.
Roll out the dough to about 3/8 inch thick on top of a silpat or parchment. Make sure the cutter is well floured, cut out the shapes and pull away the excess dough. If you’re going to hang these as ornaments, make a small loop out of dough and place it at the top of the cookie.
Bake for 10 minutes, let cool on a wire rack.
Add ribbon through the loop and the cookies are ready to hang.
